so i found this recipe for coffee cake and made it yesterday for the 3rd time and thought i’d share it as it is delicious!! this time i used almond flavouring instead of vanilla as i didn’t have any vanilla. its soooo good that i can’t wait until break time or lunch time to indulge in some more!
2 cups plain flour
3/4 cups white sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup butter
3/4 cup milk (or as needed)
1and1/2 tsp vanilla
topping:1/2 cup flour
1/2 cup white sugar
1/2 cup brown sugar
1 tsp cinnamon
1/4 cup cubed cold butter
pre-heat oven to 350 degrees/190 degrees/gas mark 4, grease and flour 9X13 pan
make topping first. add dry and then cut in the butter or use your fingers to mix it till all crumbly. put in fridge or freezer till ready for it.
in large bowl add flour, sugar, bp and salt. add butter and mix. it will be crumbly.
crack egg into measuring cup and beat, then add milk up to 1 cup line. stir in vanilla.
pour into cake mixture and mix till moist.
spread in pan and add topping.
bake 25-30 minutes.
