new recipe

so we tried out another new recipe last night. it was nice, but not everyone loved it. but it was worth a go right?!
it was sweet potato and carrot tagine with cous cous. Noah finished his plate. jonah and ezra nearly did. micah ate some of the veg, but said he didn’t like the cous cous, but then sat there dipping his finger in a eating it. silly boy. andy liked it (i think) and i liked it!! it was nice to have a meal without meat, as it doesn’t happen very often.
if anyone is interested, here it is:

serves 4
1 large onion, peeled and finely chopped
2 garlic cloves, crushed
1tsp finely grated ginger
2tsp each of ground cumin, ground cinnamon
1tsp each of ground coriander, turmeric, and dried red chili flakes
400g can chopped tomatoes
1/2 tsp sweetner/sugar
250ml vegetable stock {*i used more than this }
300g potatoes peeled and cubed
300g sweet potatoes, peeled and cubed
2 large carrots, peeled and cubed
salt and freshly ground black pepper
couscous to serve
chopped coriander to garnish

place all ingredients {except couscous and coriander} in a large lidded non-stick frying pan and place over medium heat.
bring to a boil, reduce heat, cover and simmer gently for 15-20 minutes or until vegetables are tender.
season well and serve over cooked couscous, garnished with chopped coriander.

easy peasy =) enjoy!!
